Cubanelle peppers are one of my favorites. I usually like to cut the top off and stuff them so I can egg wash them and fry them, but here’s my healthier take.

Split them horizontally, remove seeds and fill with a few spoonfuls of cottage cheese, cream cheese and ranch seasoning. Cover with gluten-free breadcrumbs.

Air Fryer for 14 minutes at 385. No spray oil needed.
