Always delicious.

I made chili last night and it was sooo good.

I put different things in my chili, but I make my own seasoning and keep it in my pantry. I usually make about 10x this recipe and keep it in a large mason jar because I use it a lot! I actually use it for my taco seasoning. Chili and taco seasoning are basically the same- just add some extra cumin when making tacos or anything Mexican.

Chili Seasoning Recipe

  • ½ cup chili powder *
  • 3 tablespoon paprika
  • 2 tablespoon ground cumin
  • 4 teaspoons onion powder
  • 2 teaspoon garlic powder
  • 1 teaspoon cayenne powder
  • 2 tbsp sugar
  • 8 teaspoons sea salt
  • 3 tbsp of flour
  • 1 tbsp dried oregano
  • 4 teaspoons ground black pepper

In this particular chili I used:

  • 2.5 lbs ground meat
  • 2 cans of kidney beans
  • 2 cans of pinto beans
  • 1 beer
  • 1 diced onion
  • 1 large can of drained diced tomatoes. (28 oz red gold are the best!)
  • My homemade seasoning

Brown meat in skillet, drain, and set aside-

In a stock pot add the diced onion and beer and sauce until the onion is soft, then add meat and all other ingredients. Let simmer for 1-2 hours to develop flavor.

Other things you can add to chili to change it up:

Peppers (all varieties), black beans, corn, mushrooms, bacon, roast, stew meat, tomato paste, beef stock etc.

My friend swears by adding a little cocoa powder to her chili, and while I’ve never tried it.. I love a good Mole sauce, so I need to do that!

I’ll share my white chili seasoning when it gets a little colder. I loveeee white chili with chicken and corn in the winter.
