One of our family faves!

2 lbs lean ground meat
1 large diced onion
2 diced bell peppers
1 small diced chili pepper (cleaned and seeds removed)
3-4 heaping tbsp chili powder
1 tbsp garlic powder
1 tsp smoked paprika
2 tsp of Worcestershire
32 oz of whole tomatoes (including the juice!!)
2 cups of long grain rice (uncooked)
1/2 cup water
2 tsp Salt
4.5 cups of SHARP cheddar (shredded)
Spicy Cajun Power Worcestershire and Cilantro to garnish.
Instructions:
Brown meat in skillet with onion and peppers. Drain and set aside.
In a large bowl combine meat with all remaining ingredients but only HALF of the cheese. Do not cook rice. It will steam. Do not drain tomatoes and tear them into pieces as you mix together. Mix well and put into casserole dish(es).
I do a small separate casserole for the kids without jalapeño, so my large one isn’t filled as high.
Cover tightly with aluminum foil and bake for 45-50 minutes at 380 degrees.
Uncover, add remaining cheese and bake for 10 additional minutes.
Garnish as desired!
