
I made these last night (with ribs) and they were so delicious. Gary had 2 of them and took another to work today. They just hit the spot!
Ingredients:
- 3 Acorn Squash
- Gorgonzola (optional)
- Bacon Crumbles
- Maple Syrup or Honey
- Honey Roasted Pecan halves
Preheat oven to 400 degrees F
Split squash and clean out seeds (save seeds to mill or roast for soups and snacks!)
Sprinkle pink salt and pepper on squash lightly.
Place face down on a baking pan that’s been drizzled or lightly sprayed with oil.
Bake for 30 minutes.
Flip squash and fill with bacon crumbles, blue cheese, and pecans. Drizzle with honey or maple syrup and return to oven for 10 minutes.
