Recipe:
2 lbs ground meat
1 lb pork sausage (Jimmy dean)
1 tbs garlic powder
1 tbs onion powder
1 tsps pink salt
2-3 tbs cajun seasoning ( we like Cajun Two Step, and YES Cajun and Italian seasonings marry well! )
1 tbs chopped basil
1 tbsp dried oregano
1 tbsp chopped/dried rosemary
2 cups of Italian breadcrumbs (ours were seasoned sourdough crumbs)
1 cup of milk
3 eggs
1 cup of shredded parm (I prefer hard grated)
Mix thoroughly and set in fridge for one hour.
Preheat oven to 400.
Roll into golf ball size meatballs. Bake for 30 minutes OR until til 165 degrees.
We ate them as is with a salad, but they could be tossed in sauce, but I would suggest about half the seasonings if you’re going to add them to sauce.
Enjoy!
