Coconut Chicken Curry

This is a regular meal here in our house and it’s almost that time of year that we can enjoy warm comfort food.

Ingredients for Curry:

1 cooked deboned rotisserie chicken 

8-10 sliced sweet peppers (I use one bag)

1 diced yellow onion

2 cans of unsweetened coconut cream

1 can of condensed Sweetened coconut cream)

2 tablespoons of yellow curry

1/2 teaspoon of ginger

1 tsp turmeric 

1 tbsp Sazon Tropical (the orange one)

2 tsp lime juice

Prepared White Rice

Pani Puri Medallions/Coins (optional)

Fresh Cilantro for Garnish

Lime Wedges

Add onions, peppers and 3 tablespoons of olive oil into pan, cook down until tender.

Add in COOKED chicken, coconut cream and all other ingredients. Allow to simmer for 1 hour, stirring occasionally.

We enjoying serving over jasmine rice with PaniPuri Medallions/Coins. I tossed in a little broccoli for myself. Good way to sneak in some yummy veggies.
