I try not to post too many recipes that are full of processed food, but this Mama needs really quick and easy meals sometimes. This was the perfect Friday Night meal for us.

Ingredient List:
- 1 package of Pillsbury pie crust from the refrigerated sections. The one you roll out into a dish or pie plate, NOT the pre cooked pie crust. I’ll add a picture below.
- 1/4 stick of butter
- 1 lb of diced ham
- 1 jar of Ragu 4 cheese Alfredo sauce
- 2 cans of sliced baby potatoes
- 2 cups of shredded cheddar cheese

Preheat oven to 400.
Add 1/2 stick of butter to a frying pan and cook ham until it’s good and crispy. Set aside.
Each box of pie crust comes with 2 rolls. Place the first roll into a glass casserole dish that has been lightly greased. The dough is round, so just tear or cut off the curves and fit it into a rectangle shape making a bottom crust. (Set the other roll aside for the top.)
Add 2 cans of drained potatoes. Spread them out evenly.
Pour the jar of cheese sauce evenly over the potatoes.
Add the ham.
Now add 2 cups of grated sharp cheddar over the ham.
Now finish it with your top pie crust, again cutting off the rounded edges and using that excess to make a rectangular crusts. Make slits in the dough, cross cross or diagonal.
Bake for 45 minutes or until the crust is nice and brown.
Enjoy!!
Note: Obviously you could add onions, broccoli, green beans, corn or a variety of herbs etc. but this is a perfect kids meal. The ham and cheese sauce make it plenty salty, so pepper was all I used at the end.
