Y’all!!! You gotta try this Crispy Potato Salad. My friend Jess posted a reel of someone making it, but I didn’t like a lot of the ingredients she used, so I made my own version.
Toss tater tots on a pan in the oven at 500 degrees, remove after 5 minutes and smash them flat.
Place them back in until they’re really crispy.
Then toss them in sour cream, a little mayo, lots of fresh dill, diced cucumbers, chopped chives, a little cajun seasoning and cracked pepper. I didn’t measure anything, but it’s so easy to throw together. We LOVED it. This is gonna be a new summer fave for grilling!!!
I was thinking how good it would be with honey mustard, cucumbers, bacon bits and cheddar cheese. Or even a pickle version. So many ideas!
